“Guisado” is Spanish for “stewed,” while the Tagalog “gisa” means “sauté.” Mix both concepts and you get a dish of pork, chicken, or beef sautéed in oil with garlic, onions, and tomatoes… then stewed in soy sauce long enough to yield a thick, savory sauce. Pansit bihon is often made guisado-style.
